Antioxidant-Boosting Strawberry & Yoghurt Parfait

Instagram-ready and totally delicious, our recipe for Strawberry Yoghurt Parfait ticks all the boxes. Is it a breakfast, is it a dessert? Who knows? Who cares? It suits at all times of day, no matter the occasion!

Strawberries are fantastic sources of Vitamin C, manganese and a whole host of antioxidants. Combined with the impressive calcium content of yoghurt and wholesome wholegrains of granola, this little dish has it all.

Mix and match with different granolas and nuts, flavoured yoghurts and/or berries to find a combination that works best for you. It’s totally vegetarian but can be made vegan by substituting with a dairy-free yoghurt for an easy alternative.

Strawberry & Yogurt Parfait

Prep time: 10 minutes | Cook time: 10 minutes | Serves: 1 | Vegetarian

Ingredients

- 1 cup sliced fresh strawberries
- 1 tsp of agave/honey
- 1/2 cup non-fat plain Greek yoghurt
- 1/4 cup granola

Method

1. Combine strawberries and agave in a small bowl and let stand until the berries start to release juice, about 5 minutes.

2. To assemble parfait, layer yoghurt and the strawberries with their juice in a cup. Top with granola.

Well, sweet treats don’t get much easier than that! Three ingredients, some chopping and some stirring; something we can all manage, however strapped for time or culinary inspiration you are.

Beautifully balanced, the sweetness of the fruit with the creaminess of the smooth yoghurt and the crunch of the granola, this parfait is a really basic dish but makes for a luxurious start to the day or finish to a meal. If you’re really looking to make it special, stir up in a glass cup or dish and take a photo of your masterpiece. You can drool it over again at a later date!
