Broccoli, Spinach & Couscous Salad

- Small head of broccoli, chopped
- Small handful of spinach
- Small bunch of fresh mint
- 40g couscous
- ½ lemon
- Small handful of mixed seeds
- Small pinch of ground cumin

1. Cook broccoli in boiling water for 4 mins, until bright green and starting to soften. Plunge into cold water, then shake off the excess water and set aside.

3. Put broccoli, spinach, mint, salt & pepper into a bowl. Pour the uncooked couscous on top and gently sit the lemon in it.

4. Toast the seeds in a dry frying pan, then mix with the cumin.

5. Pour in boiling water to just cover the couscous. Wait 8-10 minutes until the water is absorbed and the spinach is wilted.
Squeeze in the lemon juice and sprinkle with seeds before eating.
